As obsessed with opening a restaurant as I am – I also think about how I would want it to be this sort of speakeasy (sans the card games) that felt like an ongoing high energy dinner party.

Was up at the site of Heartland yesterday and heard that the West Seattle Blog did a write up that is getting all kinds of hits and menu requests. Who knew Tater Tot Casserole was so popular (Yuck!)
In the meantime, restraint is needed. We have quite a few cooks in the kitchen, but the good thing is that everyone seems to be working well together. This is the old site of the Admiral Benbow Inn – The ship in the old bar is still there, the front (the restaurant) is my main focus, and we promise a smart, farmy, American Gothic, kitchy kind of experience.
